Let's kick off our culinary adventure with a classic Italian Aperitivo, complete with refreshing spritz and crispy focaccia. Depending on the size of our group, we'll divide into smaller teams of 2-3 to ensure everyone gets a hands-on experience. With approximately two hours on the clock, we'll work together to prepare a delicious three-course meal. We'll start with a sweet treat that's close to every Italian's heart: tiramisù. Since this creamy dessert needs at least two hours to chill, we'll get it out of the way first. Next, we'll delve into the art of traditional pesto-making using a traditional mortar and pestle. This flavorful sauce will be the perfect accompaniment to our first dish: authentic Genovese-style gnocchi. Finally, we'll craft a regional fresh nut sauce to pair with another local specialty: Pansoti ravioli from Liguria. Once our dishes are ready, we'll savor the fruits of our labor together, enjoying our freshly cooked creations with a glass of regional wine at my dining table.
