The best Italian knife sharpeners came from Paularo, in Carnia. And from there came to Padua also Eugenio Valesio, in 1929, after having worked in Graz, Austria. He opened a knife retail and sharpening workshop in Gorizia, a short walk from the shop run by his son, also named Eugenio, and now managed by his nephews Paolo and Stefano. Tailors, barbers, housewives, and even surgeons were customers of this historic laboratory. Many high-level chefs from all over Italy continue entrusting their knives to the Valesios.
The Valesios' work is all about passion, and still today they seek out the best molar stones along Carnia's streams, as customary among past generations of knife sharpeners. A «humble» craft, but still necessary today, although the shop in Via Gorizia has had to adapt to the times and therefore, in addition to the sharpening service, now it also retails collectible knives and household items.
