We're one of the few remaining makers of *only* Traditional Balsamic Vinegar of Modena PDO – and we do it exclusively. Our experience begins with a captivating tour of our historic family villa, showcasing the ancient *acetaia* (vinegar cellar). Meet Mario and Giorgio Gambigliani Zoccoli, who will share their family's legacy and the secrets behind crafting this exceptional vinegar. You'll learn about the entire process, from the initial stages to the meticulous aging. Next, you'll explore the *acetaia* itself, tucked away in the villa's attic. This is where the magic happens! The highlight? A delightful tasting of our two prized vinegars: Traditional Balsamic Vinegar of Modena PDO (aged a minimum of 12 years) and our Extra Old (minimum 25 years). Prepare your palate for an unforgettable sensory journey.
